Food Friday: Homemade Pumpkin Butter

Once again, my dear friend Kristi has come to the rescue with another fantastic recipe.  A few weeks ago, I made a TON of pumpkin puree (seriously 4.5 quarts) from a carving pumpkin and was desperate for a few great recipes to use it up.  Following a plea on Facebook, she sent me a link to a great recipe and I just had to share it with you guys! It is so so good.  If you’re a fan of apple butter, you’ll probably love this recipe.  The process and flavor is really similar thanks to all the spices you add in.

I made a minor change here and there…. aka I halved it and totally forgot to add the lemon juice at the end.  Oops.  I’m not entirely sure if that last step was for flavor or to make it last longer, but we’ve devoured it already anyway so I’ll never know.  Since I hate to be a recipe stealer especially from a fellow blogger, I’ll make you head on over to Oh She Glows to get it.

The jars are leftover from my sister’s wedding favors.  They were ordered from Specialty Bottle.  The labels I “designed” myself, printed out on plain old computer paper, and stickerized using my Xyron sticker maker.
