Had to share this one because it’s my go-to pasta recipe. It’s super quick and easy and is probably my favorite comfort food.
- 1/2 lbs dry fettucine pasta (if you make your pasta fresh like we do, we go by a one egg per person proportion)
- 2 Tbsp butter
- 2 Tbsp flour
- 1 c. heavy cream
- 1 c. freshly grated Parmesan cheese (don’t use the pre-grated stuff!)
- 1/4 tsp paprika
- salt and pepper to taste
While you’re cooking your pasta, melt butter in a medium saucepan over medium-high heat. Add flour and stir to make a roux. Whisk in heavy cream. After a minute or two you’ll see the sauce start to thicken. Add the paprika and Parmesan. Season with salt and pepper. Toss in pasta and stir to coat. Voila! We usually top ours with some grilled chicken and fresh veggies…. and serve it with a large glass of wine of course. 🙂
